It falls

In a common thermistor, resistance drops as temperature rises, so more current flows. This makes it useful in fire alarms and thermostats to sense heat.

To limit the current

An LED can be damaged by too much current, so a resistor in series limits the current to a safe value. LEDs also only light when connected the right way round.
